鮨崤 Yamaki Zushi
本次設計以「美感」與「簡約」的空間調性作為發想，將店面由外至內、從粗獷到細緻作巧妙區分，賦予使用者在每個區塊轉折間體會不同的空間感受；同時透過多種材質堆疊的細膩鋪展，呼應店名「鮨」的日本握壽司，由環境中豐富層次的堆疊，意象著壽司內餡豐富的富饒之感。
Aesthetics and simplicity develop this design concept. The spatial is divided by rough and delicate methods inside out, allowing users to experience different atmospheres between the transform of areas.
承襲上一間店面的原始材料，移植舊空間內可二次回收再運用的元素，此外，考量到本案為餐飲空間，故全面採用水性護木漆而非油性含二甲苯、醋酸丁酯、環巳酮等有機溶劑的面漆；壁面部分則多方採用白洲土，能有效降低甲醛等有害物質，減少使用者在裝潢空間中所可能引發的健康疑慮。
Original materials are used from the former restaurant; elements that can be reused in this new space are recycled. At the same time, the designer applied water-based wood protection paints instead of oil paints that contain xylene, butyl acetate, cycloketone, and other organic solvents to maintain healthiness for users of the dining space. The walls made of Baizou effectively decrease formaldehyde and other harmful substances, eliminating users’ possible health concerns within the newly-decorated space.
為圍塑空間內獨有的和諧與新穎，如同店名鮨崤欲帶給消費者連結大自然「山」與「海」的天然感受，多方採用枯山水、仿岩、白洲土火山灰意象山，而魚池造景、藝術水泥地坪鏝抹仿水紋意象水；同時呼應空間中採用多種木質材料如檜木、原木、柚木、鐵鏽等，透過堆疊手法鋪展於牆面，隱喻餡料豐富層疊的壽司料理。並由純淨而質樸的材料運用中，以講究層次的設計工法，將空間環境緊扣日本料理追求完美、極致要求的核心精神；賦予每位進入空間的顧客能切實地感受到空間與料理所賦予的多層宴饗。
To outline the unique balance and original, “nature,” which this restaurant, Yamaki Zushi symbolizes, has inspired this project. The designer hoped to bring the sense of nature to customers and therefore applied Karesenzui, rock-imitated materials, and Baizou volcano ashes to construct landscape in many ways. The fish pond, artistic cement floorings symbolizes the imagery of water. At the same time, the wooden materials of cypress, teak, unpainted wood, and rust are used on walls to add layers into the space to metaphor the complex behind the simplicity of sushi cuisine. By applying pure and simple materials, and particular layering design methods, the dining environment has successfully recreated the spirit of Japanese cuisine: Pursue perfection and extreme requirements. The designer hoped that each customer that enters this place could practical experience the sensation of embodiment in many ways.
